    Knife
    Cutting board
    Food processor
    Measuring cup
    Measuring spoons, 1/4 Tsp, 1 Tsp


    Ingredients

    2 Tsp Lemon juice
    1/4 Tsp Salt
    1/4 Tsp Dijon mustard
    Dash Tabasco sauce
    Dash Worcestershire sauce
    Pinch ground Black pepper
    1 large Egg
    1 1/4 cups Vegetable or canola oil

    Time required: Prepare: 5 minutes
    Difficulty: Easy


    Directions

    1. Process lemon juice, generous 1/4 teaspoon salt, mustard, Tabasco, Worcestershire, pepper, and egg in food processor until combined and mixture turns light yellow, about 30 seconds.

    2. With machine running, pour oil in thin, steady stream through feed tube until fully incorporated, thick, and emulsified, about 1 minute.


    NOTE: This is safer than it was years ago. The eggs we get now are all pasturized and irradiated. The only thing you want to do is keep it cold till you serve.
