    Lemon Poppyseed Pound Cake

    Recipe Introduction

    This is a simple recipe that you can make a great cake with. Also, you can make these into cupcakes and use for individual strawberry shortcakes. Since it is almost a dump recipe, this is a great one for kids.

    Tools

    Bread pan
    Hot pads
    Mixing bowl
    Spatula
    Electric mixer
    Cooling rack
    Measuring cup


    Ingredients

    1, 17 oz package (3 1/4 cups) Krusteaz Lemon Poppyseed Muffin Mix
    1 packet Poppy seeds (enclosed)
    2/3 C Water
    1/3 C Butter, softened
    1 Egg



    Recipe

    Serves: 1 loaf
    Time required: Prepare: 10 minutes Cook: 70 minutes
    Oven temperature: 325 degrees
    Difficulty: Easy


    Directions

    1. Preheat oven to 325ºF.

    2. Place all ingredients in medium bowl. Using an electric mixer, blend on low speed 30 seconds.

    3. Scrape bowl. Mix on medium speed 1 minute.

    4. Place batter into lightly greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan.

    5. Bake 60-70 minutes or until toothpick inserted into center comes out clean.

    6. Cool on rack completely before cutting.


    Serve with

    Lemon flavored butter cream frosting, powdered sugar frosting with lemon juice, cream cheese frosting with lemon juice. Top with fruit.

    Cover with hot chocolate fudge, fresh raspberries and strawberries. Top with a little whipped cream.

    Top with a pie filling like berry, rhubarb, then cover with vanilla ice cream, and drizzle chocolate sauce over everything.

    Do a slice of cake, fresh raspberries, chocolate sauce, brownie slice, fresh raspberries, chocolate sauce, slice of cake, whipped cream, drizzle top with chocolate sauce.


    Variations

    *Add some berries to the batter at the end of mixing.

    *Make in muffin pans to have individual servings for strawberry shortcakes.
