    This is a little different and creamier than the regular deviled eggs. Kids will like it, and you can make it hotter for middle aged kids and adults.

    Measuring spoons, 1 Tsp, 1 Tbl
    Knife
    Fork


    Ingredients

    6 hard-cooked eggs
    1/3 C Mild salsa
    3 Tbl Reduced-fat sour cream
    3 Tbl Minced green onions
    1 Tbl Chopped black olives
    1 Tsp Lemon juice
    Green onions, red pepper strips, or parsley, optional

    Serves: 12
    Time required: Prepare: 5 minutes Cook: 13 minutes
    Difficulty: Easy


    Directions

    1. Hard boil eggs. Do this by bringing water to a boil with 6 eggs completely covered by water by 1 inch. When it boils, turn off the heat and cover, leaving it on the burner. Let sit for 10 minutes for a soft yolk, and 15 minutes for a hard yolk.

    2. Cut eggs in half lengthwise.

    3. Remove yolks and set whites aside.

    4. In small bowl, mash yolks with fork.

    5. Stir in remaining ingredients until well blended.

    6. Refill whites, using one heaping tablespoon yolk mixture for each egg half.

    7. Chill to blend flavors. Garnish with green onions, red pepper strips, or parsley, if desired.


    NOTE: To serve at a picnic or pot luck, bring two bowls or a bowl and a plate. Fill the larger bowl with ice, then put the plate on top of the ice with the eggs on it.


    Serve with

    Vegetable sticks and a blue cheese or ranch dressing.

    Appetizer for picnic or pot luck.


    Variations

    *Add a hot sauce or cayenne to make it as hot as you like.

    *Add jalepenoes finely chopped to make it hotter.

    *Mash up the egg whites and use it as an egg salad for sandwiches or salads.

    *Use a piping bag with different tips to pipe out egg yolk mixture in a pretty pattern.

    *Stick broccoli or other vegetable in yolk mixture to decorate and give more color.

    *Stick a small cooked shrimp in the yolk mixture.
