    This is another recipe the kids can make. It is very easy and quick.

    Tools

    Measuring cup
    Measuring spoon, 1/8 Tsp
    Pot
    Stirring spoon
    Bowl with cover
    Mixer
    Spatula
    Ice cream machine


    Ingredients

    1 1/4 C Heavy cream
    1 C Milk
    1/3 C Sugar
    1 C Mint chocolate chips
    2 Egg yolks
    1/8 Tsp Salt

    Serves: 1 to 1 1/2 quarts
    Time required: Prepare: 5 minutes Cook: 10 minutes Make ice cream: Varies, depending on ice cream machine.
    Difficulty: Easy


    Directions

    1. Prepare ice cream maker.

    2. Combine heavy cream, milk, sugar and mint chocolate chips in pot. Cook over low heat, stirring with a wire whisk, until the chips are melted and mixture is smooth. But do not boil.

    3. Remove from heat.

    4. While heating cream mixture, beat the egg yolks and the salt until thick in a medium bowl.

    5. Gradually add the hot cream mixture. This will pasteurize the eggs.

    6. Beat until well blended and chill in refrigerator about an hour.

    7. Pour the chilled chocolate/egg mixture into an electric ice cream freezer; churn until thick. Cover and store in freeze until ready to serve.


    Serve with

    Any type of cake, or pie.

    Serve between cookies.


    Variations

    *Crushed cookies and candy can be added.

    *This is a recipe that can be made with 1/2 being chocolate, and that swirled into the mixture.

    *Take the swirled vanilla and chocolate ice cream and add frozen raspberries.
