    Lazy Enchilada Casserole

    This is a recipe Eunice really likes.

    List of Ingredients

    Tools

    Knife
    Cutting board
    Cheese grater
    Frying pan
    Wooden spoon
    Can opener
    13" x 9" baking pan
    Hot pad


    Ingredients

    1 1/2 lb Ground beef
    1 Large Onion
    1 Dozen Corn tortilla cut into wedges
    3 C Grated cheese
    1 Can Enchilada sauce
    1 Can Tomato sauce
    Salt
    Pepper

    Recipe

    Serves: Me or 4 people
    Time required: Prepare: 30 minutes Cook: 25 minutes
    Oven temperature: 350 degrees
    Difficulty: Average


    Directions

    1. Preheat oven to 350 degrees.

    2. Cut up onion, cut tortilla, grate cheese.

    3. Brown meat.

    4. Add onions to meat and saute.

    5. Add enchilada sauce and tomato sauce and throughly heat.

    6. Mix in 2 C of cheese.

    7. Put a layer of meat and sauce in bottom of baking pan. Layer tortillas, and repeat till done.

    8. Cover top with remaining cheese.

    9. Bake for 25 minutes.


    Serve with

    Corn bread, cottage cheese, and fruit or green salad.

    Rice, granite, refried beans, and horchata.

    Spanish rice, refried beans, yougart, fresh fruit.


    Variations

    *Use a boiled and shredded chicken, beef, pork. Or use any left over meat you have.

    *Add in corn and chillis.

    *In place of tomato sauce, blend together a can of Rotel and small can of tomato paste.

    *Add any vegetables you want like green peppers, carrots, corn, potatoes, or beans.
