    Curried Tropical Fruit Salad

    Cutting board
    Bowl
    Spoon
    Measuring cup
    Measuring spoon, 1 Tsp, 1 Tbl


    Ingredients

    1 package (10 oz.) DOLE Italian or European Salad Blends
    1/2 C Buttermilk
    2 Tbl Lime juice
    1 Tsp Curry powder
    2 Tsp honey
    1 DOLE Fresh Pineapple
    1 medium DOLE Mango or Papaya, peeled, seeded, cut into 1-inch chunks
    2 Kiwi, peeled and sliced
    3/4 C DOLE Slivered Almonds, toasted



    Recipe

    Serves: 4 servings
    Time required: Prepare: 30 minutes
    Difficulty: Easy


    Directions

    1. Place salad blend on large serving platter.

    2. Stir together buttermilk, lime juice, curry powder and honey in a bowl.

    3. Cut crown from pineapple. Cut pineapple lengthwise into quarters. Cut shell off. Cut core out.

    4. Save 1/2 of pineapple for another recipe.

    5. Cut remaining pineapple into thin slices.

    6. Arrange pineapple wedges, mango chunks and kiwi slices over lettuce.

    7. Sprinkle almonds and drizzle dressing over salad. Serve immediately.


    Serve with

    Fish dinner, or a bbq chicken with a citrus marinade, and a smoothie.


    Variation

    *Add some cayenne pepper to spice it up.

    *Change the fruit to what you like.

    *Add things like jicama, coconut, and what ever your heart desires.
