    This is a simple and very good recipe, that you can spice up with a squirt of lemon juice on finished rice.

    Tools

    Pot with lid or rice cooker
    Stirring spoon
    Measuring cup
    Measuring spoons, 1/8 Tsp, 1 Tsp, 1 Tbl
    Knife
    Cutting board


    Ingredients

    1 C Uncooked rice
    1 Tsp Margarine (optional)
    1 Clove garlic, minced
    1 Tsp Grated lemon peel
    1/8 to 1/4 Tsp Ground black pepper
    2 C Chicken broth
    2 Tbl Chopped fresh parsley

    Difficulty: Easy


    Directions

    1. Cut up all ingredients that need it.

    2. Combine rice, margarine, garlic, lemon peel, pepper and broth in 2- to 3-quart saucepan.

    3. Bring to a boil. Reduce heat; cover and simmer 15 minutes or until rice is tender and liquid is absorbed.

    4. Stir the bottom rice to the top to mix. Let sit with the lid off for 4 minutes.

    5. Stir in parsley.

    Microwave Oven Instructions

    1. Cut up all ingredients that need it.

    2. Combine rice, margarine, garlic, lemon peel, pepper and broth in 2- to 3-quart microproof baking dish.

    3. Cover and cook on HIGH 5 minutes. Reduce setting to MEDIUM and cook 15 minutes or until rice is tender and liquid is absorbed.

    4. Stir the bottom rice to the top to mix. Let sit with the lid off for 4 minutes.

    5. Stir in parsley.


    Serve with

    Lemon chicken, asparagus, garlic bread sticks, and a smoothie.

    Lightly seasoned pork dish, crusty bread, green salad, tomato slices with olive oil and salt and pepper, finished off with a smoothie.


    Variations

    *Add some lemon juice while you stir in the parsley to make it a stronger lemon flavor.

    *Cook the rice with slices of lemon.

    *Add a little dry mustard to the rice before you cook it.
