    3 SLICES BACON
    3 RIPE AVOCADOS
    ¼ CUP PACKED FRESH CILANTRO LEAVES
    ½ CUP SOUR CREAM
    ¼ TSP SALT
    2½ TABLESPOONS LIME JUICE

    RAW VEGETABLES FOR DIPPING

    COOK BACON UNTIL CRISP. CRUMBLE. SET ASIDE.

    REMOVE PIT AND SKIN FROM AVOCADO. PLACE IN FOOD PROCESSOR WITH CILANTRO, SOUR CREAM, SALT AND LIME JUICE. PUREE UNTIL SMOOTH.

    STIR IN HALF THE BACON AND SCRAPE INTO A SERVING BOWL. TOP WITH REMAINING BACON.

    SERVE WITH RAW VEGETABLES.

    NOTE BY ROBERTA: IF AVOCADOS AREN’T RIPE, ENCLOSE THEM IN A PAPER BAG AND SET ASIDE AT ROOM TEMPER-
