    1 LB. CHICKEN LIVERS

    2/3 CUP SOFT BUTTER

    4 TABLESPOONS MINCED FRESH ONION

    1 TEASPOON SALT

    1 TEASPOON DRY MUSTARD

    PINCH OF CLOVES

    PINCH OF CAYENNE

    PINCH OF NUTMEG

    2 TABLESPOONS (GENEROUS) OF BOURBON


    Recipe



    PUT LIVERS IN SAUCEPAN, ADDING WATER TO COVER. COOK FOR 15 MINUTES OR UNTIL TENDER.


    DRAIN LIVER. QUARTER AND PLACE IN FOOD PROCESSOR. ADD ALL REMAINING INGREDIENTS AND BLEND UNTIL MIXTURE IS SMOOTH.


    PACK IN CROCK AND CHILL THOROUGHLY.



    NOTE: I MAKE THIS IN TWO SEPARATE BATCHES – HALF
