    DRUNKEN BLUEBERRY-BANANA BREAD

    3 cups flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1 teaspoon salt
    1 stick butter, softened
    1 cup sugar
    2 eggs
    ½ cup bourbon
    2 medium sized bananas, mashed
    1¼ cups fresh blueberries, mashed or pureed

    Recipe



    Preheat oven to 350°. Grease and flour 2 8½ x 4½ x 2½ inch bread pans.

    Stir together the flour, baking powder, baking soda and salt. Set aside.

    Cream the butter and the sugar. Add eggs, beat in well. Add bourbon. Mix well, and then mix in the dry ingredients.

    Divide the batter in half. Add mashed banana to one half of the batter, and the mashed/pureed blueberries to the other half.

    Alternating batters, drop by scoopful (I use a small sized ice cream/cookie dough scoop, but you could use a Tablespoon), into the prepared pans. (Tops can be sprinkled with a mixture of sugar and cinnamon, if so desired) Bake 55 minutes to 1 hour. Let cool in the pans 5-10 minutes, before turning out onto a rack to cool completely.

    You can make "Sober" Blueberry-Banana Bread by substituting milk for the bourbon.
