1 3/4 cups flour (approximately)
2 teaspoons baking powder
1/3 cup butter
¼ teaspoon salt
2/3 cup sugar
¼ teaspoon baking soda
1 large egg (or 2 small ones)
1 cup pureed cantaloupe
Recipe
Grind or mash cantaloupe until you have a cup of pulp. Set aside.
Mix flour, baking powder, salt, baking soda. Sift three times!
Cream sugar and butter until light. Add the eggs and beat well. Add cantaloupe and mix in.
Add flour mixture ½ cup at a time, and mix well (until smooth) after each addition.
Put into a greased and floured loaf pan. Bake for 40 minutes at 350°, or until bread tests done.
