COCONUT-PINEAPPLE BREAD

2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2-4 Tablespoons butter, softened
½ cup sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon rum extract
¼ cup milk
8½ oz. can crushed pineapple and juice
½ cup chopped macadamia nuts
¼-½ cup shredded toasted coconut
Recipe
Preheat the oven to 350°F. Grease a 9- x 5-inch loaf pan.
Sift together the flour, baking powder, baking soda, and salt in large bowl.
In a separate large bowl, cream together the butter and sugar until light and fluffy. Add the egg, vanilla extract, and rum extract.
Add the flour mixture and the milk, pineapple, and juice. Stir until just combined.
Add a little more flour if needed. The dough should be sticky and not too thick.
Fold in the nuts and coconut.
Pour into the prepared pan and bake for 1 hour.
