HUSH PUPPIES II

List of Ingredients
1 Cup (250 ml) self-rising white cornmeal mix
½ cup (125 ml) self-rising flour
½ cup (125 ml) diced onion
1 Tablespoon (15 ml) sugar
1 Large egg, lightly beaten
½ cup milk or beer
Vegetable oil
Recipe
Combine first 4 ingredients in a large bowl. Add egg and milk to dry ingredients, stirring just until moistened. Let stand 10 minutes.
Pour oil to a depth of 2 inches into a Dutch oven; heat to 375° F (191° C). Drop batter by rounded tablespoonfuls into hot oil, and fry, in batches, 2 to 3 minutes on each side or until golden brown. Drain on a wire rack over paper towels; serve immediately.
Note: Keep fried hush puppies warm in a 200° F (94° C) oven while frying catfish or whatever they're being served with.
Variation - Jalapeño Hush Puppies: Add 1 seeded, diced jalapeño to batter. Proceed with recipe as directed.
