    ORANGE ROLLS

    Source of Recipe

    Mark

    List of Ingredients

    1/2 cup shortening
    1/4 cup sugar
    1/2 tsp salt
    1/2 cup boiling water
    1 pkg dry yeast
1/2 cup very warm (not hot) watter
    1 egg, beaten
    3 1/2 cups flour
    1/2 stick melted butter

    Orange Filling:
    2 cups sifted powdered sugar
1/2 cup (1 stick) melted butter
    1/2 cup fresh orange juice
2 tbsp finely grated orange peel

    Recipe

Put shortening, sugar and salt in a mixing bowl. Pour boiling water over the ingredients in the bowl, cover and let stand for 20 minutes.

Dissolve yeast (mix well) in very warm (not hot 120-130 degrees f.) water.

Add beaten egg and dissolved yeast to first mixture. Gradually add enough flour to make a workable dough. Cover and refrigerate overnight.

Mix filling ingredients and set aside.

On a floured board, knead and then roll dough to 1/4 inch thickness. Using a biscuit cutter, cut and dip rolls in melted butter.

Prepare two regular muffin tins with baking papers. Place one tablespoon of orange filling in the bottom of each paper. Place rolls on top of orange mixture.
Lightly press rolls down. Cover rolls with one tablespoon of orange filling.

Let rolls rise in a warm place for two hours. Bake at 375 degrees until nicely browned - about 15 minutes.

Note: The secret to having rolls rise is to have the water at the right temperature, very warm, but not hot.
