PUMPKIN FRITTERS

List of Ingredients
1 cup granulated sugar
1 cup brown sugar, packed
6 cups all-purpose flour
2 Tablespoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground cardamom
1/2 teaspoon mace
1 cup butter, melted
4 eggs
2 cups pumpkin puree
1 cup buttermilk
2 pounds shortening (for frying)
2 cups powdered sugar
Recipe
In large mixing bowl, combine the granulated sugar, brown sugar, flour, baking powder, salt, cinnamon, cardamom, and mace. In a separate bowl, combine the milted butter, eggs, pumpkin, and buttermilk. Add the wet ingredients to the dry, and mix well. Let rest 20 minutes.
Heat shortening in cast iron skillet until it reaches 360°F (caution hot).
With a large tablespoon, drop spoonfuls of dough into the hot shortening a few at a time. Remove from hot shortening and place on absorbent paper to drain.
Dust heavily with powdered sugar and serve.
