    10 TO 12 SLICES OF WHITE BREAD, CRUST REMOVED, CUT INTO HALVES

    1 LB FARMER CHEESE AT ROOM TEMPERATURE

    2 EGG YOLKS

    2 TABLESPOONS SUGAR

    1 TEASPOON VANILLA/SUGAR

    1 TABLESPOON VEGETABLE OIL

    SOUR CREAM

    APPLESAUCE

    MIX ALL FILLING INGREDIENTS IN A MEDIUM BOWL WITH A WOODEN SPOON.


    PLACE FILLING ON HALF OF BREAD SLICES. COVER WITH ANOTHER PIECE OF BREAD AND SECURE.


    HEAT 1 TBSP OIL IN A NONSTICK 8" SKILLET OVER MEDIUM HEAT. ADD SEVERAL BLINTZES AT A TIME AND COOK UNTIL DEEP GOLDEN AND SLIGHTLY CRISP -- ABOUT 1 MINUTE PER SIDE. REPEAT WITH REMAINING BLINTZES.


    SERVE HOT WITH SOUR CREAM AND APPLESAUCE ON THE SIDE.
