Pastry for 9” pie crust
4 eggs
2/3 cup sugar
½ teaspoon salt
¼ teaspoon nutmeg
2 2/3 cups scalded milk
1 teaspoon vanilla
Recipe
Beat eggs. Beat in sugar, salt, nutmeg, hot milk and vanilla. Pour into pastry lined pie pan. Bake at 425° for about 25-30 minutes, or until a knife inserted near the SIDE of the pie comes out clean. The center may still seem soft, but it will set up as the pie cools. Over-baking a custard will make it watery.
**For cholesterol reduced pie, use egg substitute and skim milk.
