PINEAPPLE UPSIDE DOWN CAKE (microwave)

2 eggs
4 oz caster sugar (plus extra for bowl)
4 oz butter (plus extra for bowl)
4 oz plain flour
2 teaspoon baking powder
1 teaspoon cinnamon
2 slices of pineapple (skin removes and chopped)Recipe
1) Grease a small microwaveable pudding bowl with a little butter, and dust some of the caster sugar around the greased surface.
2) Place sugar, butter, eggs, flour, baking powder and cinnamon in a food processor and blitz to combine.
3) Place the pineapple in the base of the pudding bowl
4) Pour over pudding mixture
5) Cover the bowl with cling film (saran wrap, or the like) and microwave on high for 4 minutes
6) Remove the pudding and cling film
7) Carefully tip the pudding out on to a flat plate, so that the pineapple is facing up.
8) Serve while still hot with lovely thick custard.
