BUTTERMILK PECAN PRALINES (microwave)

1 Cup buttermilk
2 Cups granulated sugar
1 teaspoon baking soda
1½ to 2 Cups pecan halves or pieces
1 teaspoon vanilla
1 Tablespoon butter Recipe
Use the largest bowl that will fit in your microwave oven (it should have a rotating carousel), mix together buttermilk, sugar and baking soda. Set the microwave on high for approximately 17 minutes (this will vary depending on the wattage of your oven). Let mixture boil up almost to the top of the bowl, then open the microwave and stir mixture down quickly. Close microwave and repeat this process every time the mixture boils up. Once the mixture reaches a golden-brownish color (somewhere around that 17 minute mark), remove from the microwave and at once add butter, vanilla and pecans. (Some folks like more pecans than candy, and some like more candy than pecans; some people like pecan pieces rather than halves.)
Beat this mixture until it's glossy and beginning to thicken. Quickly spoon onto greased wax paper (wax paper should be on top of a nonporous surface so that candy will harden to the right consistency), making little patties. Let the candy completely cool before removing it from the wax paper.
