    List of Ingredients




    2½ cups sugar
    ½ light corn syrup
    ½ cup water
    2 egg whites
    2 teaspoons vanilla
    1 cup nunts, corasley chopped
    ¼ teaspoon salt

    Recipe



    In a heavy saucepan, combine sugar, corn syrup and water. Cook on low heat, stirring until the sugar dissolves. Cover, cook 1 minute until sugar on the pan sides melts. Uncover and bring to a boil. Cook on high heat WITHOUT stirring until a candy thermometer reads 235°

    Use an electric mixer, at high speed to beat the egg whites with the salt until stiff peaks form.

    In a thin stream, pour half of the hot syrup over the egg whites. Continue beating.

    Continue to cook the remaining syrup until a small amount forms a hard ball, when dropped into water, or until 260° is reached on the candy thermometer.

    Pour into mixture while continuing to beat. Add vanilla and nuts. Beat until the mixture is stiff enough to hold its shape, about 5 minutes. Drop in mounds, from a spoon to form candies.
