BAKED PORK CHOPS W/ 2 KINDS OF POTATOES

Judy said to make sure that you cut the potatoes at a uniform thickness, or some will be too crunchy! She also stated that the next time she makes this, she will add more potatoes, underneath the chops!
List of Ingredients
4 Thick Cut Loin Pork Chops
2 Medium Boiling Potatoes
2 Medium Sweet Potatoes
2 Medium Onions
2 Tablespoons Vegetable Oil
Parsley Flakes
Salt and Pepper Recipe
Place Pork Chops in Glass Baking Dish. Peel and Slice Potatoes, Sweet Potatoes and Onions. Add to baking dish. Drizzle with Oil and season with Salt and Pepper (Judy likes to go heavy on the Black Pepper!). Sprinkle with Dried Parsley. Cover tightly (Aluminum Foil or Casserole Cover will do). Pre-Heat oven to 350°. Put casserole in oven, then reduce temperature to 275°. Bake for approximately 1 1/2 hours
