MINT BUTTER

List of Ingredients
6 oz (1½ sticks) unsalted butter
juice of 2 lemons (about ¼ cup)
1 cup loosely packed fresh mint leaves
sugar(fructose or try to leave out)
a large clove garlic, crushed
salt
Recipe
Melt butter over heat. Remove from heat and set aside. Place mint, garlic, lemon juice (sugar), small pinch salt in food processor or blender. Pulse until leaves and garlic are finely chopped. With motor running, slowly pour butter in thin stream. When all butter is added and sauce is smooth, taste and adjust (sugar) and salt if needed. Let
stand 10 minutes. Butter should start to solidify. Just before serving, whip until fluffy and smooth. Keeps up to 1 week in refrigerator.
