6 Tablespoons butter
1 cup dark-brown sugar
2 eggs
1 teaspoon vanilla
2/3 cup flour
1 teaspoon baking powder
¼ teaspoon salt
½ cup chopped nuts Recipe
Preheat oven to 350°. Grease an 8 inch square baking pan.
Melt the butter in the microwave. Stir in the brown sugar until the brown sugar has melted. (You may need to zap for a few seconds, a couple of times, in the microwave). Let cool, slightly.
Beat the eggs and vanilla into the brown sugar mixture. Mix the flour, baking powder and salt together, add to the first mixture, and beat just until thouroughly mixed (you don't want to over beat it!) Stir in the nuts.
Spread batter evenly in pan, and bake for about 30 minutes. When blondies are done, the top will look dry, and a toothpick, inserted in the middle, will come out just barely clean. Remove from oven, and cook on a rack, before cutting and removing from pan.
VARIATION: add ½ cup shredded coconut to the batter.
