    CHOCOLATE MINT SANDWICH COOKIES

    2/3 cup butter or margarine, softened
    ½ cup sugar
    ½ cup brown sugar (packed)
    ¼ cup milk
    1 egg
    2 cups all-purpose flour
    ¾ cup baking cocoa
    1 teaspoon baking powder
    ½ teaspoon baking soda
    ¼ teaspoon salt

    FILLING:

    2¾ cups confectioners' sugar
    ¼ cup half-and-half cream
    ¼ teaspoon peppermint extract
    ¼ teaspoon salt
    Green food coloring

    In a mixing bowl, cream butter and sugars. Add milk and egg, and mix well. Combine dry ingredients, gradually adding it to the creamed mixture. Mix well.

    Cover and chill for 2 hours, or until firm.

    Pre-heat oven to 375°.

    Roll chilled dough on a lightly floured surface, to 1/8 inch thickness. Cut with a 1½ inch cookie cutter and place 1 inch apart on greased baking sheets. Bake at 375° for 5-6 minutes, or until edges are lightly browned.

    Remove to wire racks to cool completely.

    Combine filling ingredients. Spread on half of the cookies, and top with another cookie to make a sandwich.
