MOLASSES OATMEAL RAISIN COOKIES

Recipe Introduction
Anytime I'm using raisins, before adding them to the recipe, I put them in a microwave safe measuring cup, cover with water, and bring to a boil in the microwave. Let set for about 5-10 minutes, to allow raisins to soak up some of the liquid, drain off, and use as usual, in your recipe. This will make your raisins plump and juicy!
List of Ingredients
1 cup granulated sugar
1/2 cup shortening
1 egg
1/2 cup molasses
2 cups sifted flour
1 teaspoon salt
1 1/2 teaspoons baking soda
1 teaspoon vanilla extract
1 cup quick-cooking oats
1 to 1 1/2 cups raisins Recipe
Cream sugar and shortening together in a large mixing bowl. Add egg and molasses; beat well. Add sifted dry ingredients and mix well. Add vanilla then stir in oatmeal and raisins. Drop from teaspoon onto greased baking sheet. Bake oatmeal raisin cookies at 375° for 10 to 12 minutes, until done.
Makes about 4 dozen oatmeal raisin cookies
