    2 sticks butter, softened
    1 cup light-brown sugar
    1 cup granulated sugar
    2 eggs, well beaten
    1 cup extra crunchy Jif Peanut Butter
    3 cups flour
    2 teaspoons baking soda
    ¼ teaspoon salt

    Recipe



    Preheat oven to 350°.

    Beat the butter until creamy, then slowly add the brown and granulated sugars. Beat until well blended. Add the eggs, and beat until smooth and light. Then add the peanut butter, and mix well.

    Pour the flour into the peanut butter mixture, then sprinkle on the baking soda and salt. Beat until all ingredients are well mixed.

    Roll spoonfuls of dough into small balls (I use a small ice cream or cookie scoop). Place about 1 inch apart on an ungreased cookie sheet (I cover the cookie sheets with either aluminum foil or parchment paper). Flatten each cookie with the back of a fork into a hatchwork pattern (I use a square holed potato masher).

    Bake at 350° about 8-10 minutes, or until lightly browned.
