CARAMEL CUSTARD CUPS

Turn on oven and set at 350° (Moderate)
Press 1 Tablespoon brown sugar lightly into each of 4 custard cups.
Mix together, in a large bowl:
2 eggs, slightly beaten
1 cup evaporated milk
2/3 cup water
1/3 cup sugar
1½ teaspoons vanilla
few grains of salt
Pour carefully over brown sugar. Set cups in a shallow pan holding 1 inch of hot water. Bake 50 minutes, or until knife inserted near edge of custard comes out clean. Cool. Loosen edges with knife and unmold.
Serves 4.
