PASTRY:
1 cup water
½ cup butter
1 cup sifted flour
4 eggs
Recipe
Heat water and butter to a rolling boil. Stir in flour all at once. Stir vigorously over low heat until mixture leaves the pan and forms a ball (takes about 1 minute). Remove from heat and beat eggs in, one at a time. Beat until mixture is smooth and velvety.
Place mixture in a pastry bag with #6 C.S. pastry tube. Pipe in thick strips onto ungreased cookie sheet. Bake at 400° for 35-45 minutes. Allow to cool slowly away from draft. Cut off tops with sharp knife.
Fill with vanilla pudding, replace tops, and frost with chocolate frosting.
