CRACKLING CRUNCH ICE CREAM LOAF

1 Cup (240 ml)Crackling Oat Bran cereal, crushed
1 Tablespoon (15 ml) butter, melted
2 Tablespoons (30 ml) caramel sauce, divided
1 Pint (470 ml) ice cream, such as vanilla bean
Recipe
Coat a petite loaf pan (2-cup capacity) with cooking spray; line pan with two sheets plastic wrap,
crisscrossing them and leaving at least a 4-inch overhang at all sides.
Mix cereal and butter. Sprinkle half of cereal mixture in bottom of pan; drizzle with caramel sauce.
Spoon half of ice cream on top, spreading and pressing gently into a smooth, even layer. Repeat
with remaining ingredients. Fold in plastic wrap over the loaf; freeze 6 hours or until firm.
To serve, invert on a serving plate and peel off plastic. Slice and serve with additional caramel
sauce, if desired.
Makes 2 to 4 servings.
