    CREAM CHEESE BROWNIES

    3 oz. Unsweetened chocolate
    5 oz. Bittersweet chocolate
    10 oz. Butter
    3 eggs
    1 1/4 cup sugar
    1/4 teaspoon salt
    1 1/2 teaspoon vanilla extract
    2 cups bread flour
    8 oz. Cream cheese
    1 Tablespoon Sugar
    1/2 teaspoon vanilla extract
    1 egg yolk

    Brownies

    1. Melt the two chocolates and the butter together in a double boiler. Let the mixture cool to room temperature.
    2. Mix the eggs, sugar, salt and vanilla together until well blended, but do not whip.
    3. Blend in chocolate mixture.
    4. Sift flour and fold in.

    Cream Cheese

    1. In a mixer with paddle attachment, work the cream cheese at low speed until smooth and creamy.
    2. Add the sugar and vanilla and mix in at low speed until smooth.
    3. Add the egg yolks and blend in.

    Makeup

    Grease and flour a 9-by-13 inch pan or two 8-inch pans, or line it with parchment paper. Spread about half the brownie mixture into the pan. Deposit half the cream cheese mixture in pools on top of the brownie batter. Pour in the remaining brownie batter. Spread evenly in pan. Drop the remaining cream cheese mixture in pools on top. Swirl the two batters together slightly, using a knife or a spoon handle.

    Baking

    Bake at 325° for about 45 to 50 minutes.

    Strawberry Sauce:

    1 1/2 pounds Frozen, Sweetened Strawberries

    1. Puree and sieve frozen sweetened strawberries, or use fresh strawberries and sweeten with sugar to taste.
    2. Use as-is or simmer until thickened as desired.
