    3 eggs
    2/3 cup flour
    2 teaspoon cinnamon
    1/2 teaspoon salt
    1/2 - 1 cup pecans
    1 Tablespoon lemon juice
    1 cup sugar
    1 teaspoon baking powder
    1 teaspoon ginger
    1/2 teaspoon nutmeg

    Cream Cheese filling:

    1 8 oz. pkg. cream cheese
    1 cup powdered sugar
    1 teaspoon vanilla
    4 tbsp. butter, softened

    Recipe



    Beat eggs, pumpkin, flour, cinnamon, salt, lemon juice, sugar, baking powder, ginger, & nutmeg together. Pour onto a greased jelly roll pan. Sprinkle nuts on top. Bake 15 minutes at 350°. Cool 8-10 minutes.

    Sprinkle powder sugar on cheesecloth or towel. Turn cake onto cloth and roll up and leave 10 minutes. Unroll and spread with cream cheese filling. Roll up and wrap in foil. Refrigerate at least 2 hours before serving. Can also be frozen several weeks.
