Stove-Top Rice Pudding With White Chocolate & Fresh Fruit is the complete name of this recipe
List of Ingredients
4 1/2 Cups Milk
3 oz white chocolate chips
2/3 Cup regular long- grain rice
4 Tablespoons granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/2 Pint strawberries
1 large kiwi
4-6 blueberries
4-6 raspberries
Recipe
In a heavy 2 qt. pot, heat milk hot enough to melt the chocolate with boiling, add in chocolate, reduce heat and stir chocolate constantly until melted. Stir in rice and sugar. Cover and simmer 20 minutes, stirring occasionally.
In a small bowl with a fork, beat eggs slightly; stir in a small amount of the rice mixture into the beaten eggs, stir rapidly to prevent lumping.
Cook over low heat until rice mixture is slightly thickened, about 1-2 minute, stirring (do not boil).
Remove from heat; stir in vanilla extract, cinnamon, and allspice.
Serve warm or refrigerate to serve cold later.
Just before serving, hull strawberries and cut into thick slices; Peel kiwi and slice. Arrange the fruit in a pretty design on top of the pudding. Maple syrup can be poured over each serving if desired.
