CHICKEN PARMESAN

6 (4 oz) boneless, skinless chicken breasts
½ teaspoon pepper
Cooking spray
1 Tablespoon margarine
½ sliced mushrooms
1 Tablespoons sliced green onions
1 Tablespoon flour
1 cup skim milk
3 Tablespoons grated Parmesan cheese
Recipe
Put chicken breasts between 2 pieces of waxed paper and flatten with a mallet. Sprinkle chicken breasts with pepper.
Coat a large non-stick skillet with cooking spray. Cook chicken breasts over medium high heat, turning once (about 8 minutes total cooking time). Transfer to cooking platter, and keep warm. Wipe skillet with paper towel.
Add margarine to skillet, and the mushrooms and green onions. Cook until tender. Add flour and stir well. Gradually add the milk, stirring constantly, cook for about 1 minute, or until thickened. Add cheese and stir well. Spoon over chicken.
