    1 cup eggplant, peeled and sliced very thin
    ½ teaspoon salt
    ½ teaspoon pepper
    ¼ teaspoon oregano
    6 oz ground beef, broiled and crumbled
    1 medium tomato, sliced
    1 teaspoon vegetable oil
    1 slice enriched white bread,crumbled

    Recipe



    Place eggplant flat on baking sheet. Sprinkle with salt, pepper and oregano. Bake at 350° for 10 minutes, turning once. Place half of the meat in a baking dish. Spread half the eggplant on the meat. Place half of the tomato on the eggplant. Repeat the layers. Sprinkle oil on top. Sprinkle bread crumbs over the casserole. Cover. Bake for 15 minutes, or until heated through.

    Note: for a more "authentic" Moussaka taste, substitute ground lamb for the ground beef.
