    4 STRIPS BACON
    ½ CUP CHOPPED SCALLIONS (GREEN ONIONS)
    1 CUP CUBED SWISS CHEESE
    ¼ CUP GRATED PARMESAN
    3 EGGS, LIGHTLY BEATEN
    1½ CUPS HEAVY CREAM
    ¼ TEASPOON NUTMEG
    ½ TEASPOON SALT
    ¼ TEASPOON WHITE PEPPER

    BAKE PASTRY 5 MINUTES AT 450°F.


    COOK BACON UNTIL CRISP. REMOVE ALL BUT 1 TABLESPOON OF FAT.


    SAUTÉ SCALLIONS IN FAT UNTIL TENDER BUT NOT BROWN.


    CRUMBLE BACON AND SPRINKLE OVER PIE SHELL. SPRINKLE SCALLIONS AND CHEESES OVER BACON.


    COMBINE REST AND STRAIN OVER CHEESE MIXTURE.


    BAKE 15 MINUTES AT 450°F. REDUCE TO 350°F AND BAKE UNTIL A KNIFE INSERTED ONE INCH FROM PASTRY EDGE COMES OUT CLEAN – ABOUT 10 MINUTES. SERVE IMMEDIATELY.
