    Roast loin of Pork
    salt
    Pepper
    Garlic powder
    Roasting Potatoes
    1 lb. Sauerkraut

    Recipe



    Heavily season roast with salt, pepper and garlic powder. Put in roasting pan, fat side up. Roast at 350°-375° for about 30 minutes per pound.

    Meanwhile, peel the potatoes, and cut into quarters. Boil until slightly softened. Put into the bottom of the roasting pan, with the meat, about 75 minutes before the meat is due to be done. If there isn't enough grease in the bottom of the pan, to prevent the potatoes from sticking, add a little butter or margarine.

    Turn the potatoes after ½ hour, and add the sauerkraut to the pan.

    **Note: Pork should be cooked to an internal temperature of 160° F, you should always check with a meat thermometer, to be sure.
