PORK PIE

List of Ingredients
1¼ lbs cubed cooked pork, divided into three equal parts
2 egg yolks
1/8 teaspoon ground pepper
1/8 teaspoon mace
1/8 teaspoon ground cloves
¼ teaspoon sage
¼ teaspoon thyme
¼ teaspoon ground nutmeg
½ teaspoon salt
3 Tablespoons of butter, cut into small cubes
Pastry for a 2-crust pie
Recipe
Take 2/3 of the pork and season with pepper, sage, thyme and half of the salt. Divide this mixture in half, and set aside.
Take the other 1/3 of the pork and season with the mace, cloves, nutmeg and the rest of the salt.
Mix one egg yolk into each of the mixtures.
Take one pie crust, and line a deep dish casserole. Place half of the first pork mixture in the crust and dot with about 1/3 of the butter. Place the entire second mixture on top of that, and dot with another 1/3 of the butter. Place the remainder of the first mixture on top, dot with remaining butter, and cover with the second crust. Cut vents in the top of the pie.
Bake at 375° for about 45 minute to 1 hour. Or until crust is golden and filling is heated.
