    SIMON'S GARLIC ROAST PORK

    12 or more large cloves of Garlic
    1½ teaspoons (7 ml) Kosher (rock) salt
    2 Tablespoons (30 ml) Olive Oil
    1 teaspoon (5 ml) ground black pepper
    2½ lb pork roast

    Recipe



    Reserving 6 cloves of the garlic, blend the rest of the garlic with the oil, salt & pepper, into a paste. With a sharp knife, score ¼ inch deep diamonds over the roast. Rub in the paste. Wrap in plastic cling wrap, and store in the refrigerator overnight.

    Remove the plastic, and roast in a 375° (190 ° C) oven for 1¼ hours, or until done.

    Makes 6-8 servings
