    JO'S FAT REDUCED LASAGNA

    List of Ingredients

    1 recipe Turkey Italian Sausage**
    9 uncooked lasagna noodles
    1½ (26 oz) jars of meatless spaghetti sauce
    8 oz sliced mushrooms
    1 onion, sliced and separated into rings
    15 oz part skim ricotta cheese
    1 cup small curd cottage cheese
    1 Tablespoon Pizza seasoning or dried Italian Herbs
    2 cups fat-reduced mozzarella cheese, divided
    ¼ cup parmesan

    Recipe

    In a large skillet, cook sausage. Set aside (if you use ground skinless turkey breast it will be about 99% fat free, and you will have no fat to drain off).

    Spray the skillet with cooking spray, and saute the onions and mushrooms, until the onions are translucent. Set aside.

    Combine the ricotta, cottage cheese, ½ of the mozzarella and the pizza seasoning in a small bowl.

    Ladle a scant amount of spaghetti sauce on the bottom of the casserole (just enough to barely cover). Place 3 UNCOOKED lasagna noodles, on top of it. Spread half of the ricotta mixture over the noodles. Sprinkle half of the turkey sausage on top of that. Spread half of the onions & mushrooms on top of that, top with 1/3 of the remaining sauce. Lay another 3 lasagna noodles on top of that, the rest of the ricotta, the rest of the turkey sausage, the rest of the onions and mushrooms, and then another 1/3 of the sauce. Top with the last 3 noodles, the rest of the sauce, and then sprinkle the remaining mozzarella and the parmesan cheeses on top. Cover with aluminum foil.

    Bake at 375° for 45 minutes. Remove the foil, return to the oven for another 15 minutes, or until the cheeses are brown and bubbly. Remove from the oven, and let sit for 5-10 minutes, before cutting and serving.

    Notes: I have actually served this lasagna to company, and no-one realized that they were eating a fat-reduced meal! Hubby actually likes it BETTER than "regular" lasagna.
