    FRESH WATERMELON RIND PICKLES

    4 cups cubed, peeled watermellon rind, red removed
    3/4 cup sugar
    1 cup vinegar
    1-1/2 tsp pickling spice

    Recipe



    In a medium saucepan, stir together watermelon rind, sugar, vinegar, pickling spice. Stirring often over high heat, bring to boil, reduce heat, cover and simmer gently until rind is tender and translucent, 45 or 50 minutes. Cool: refrigerate rind with liquid in covered glass container. Store at least 12 hrs to blend flavors before serving. It will keep refrigerated for 2 weeks.
