CHICKEN IN CHEESE SAUCE

List of Ingredients
2 Tablespoons butter
2 Tablespoons flour
1 cup milk
1 cup sharp Cheddar cheese, shredded
1 teaspoon Worcestershire Sauce
Dash of Tabasco sauce
2 cups cooked, diced chicken
1 pkg. frozen vegetables, thawed and drained
Parmesan and/or Romano Cheese to taste.
Recipe
In the top of a double boiler, over boiling water, melt the butter. Add flour to make a paste. Add milk, stirring constantly, until it starts to thicken. Add cheese, Worcestershire and Tabasco sauces. Blend well. Remove from heat.
In the bottom of a greased casserole dish, place the thawed vegetables. Top with the chicken pieces. Pour Cheese sauce over the top. Sprinkle the top with Parmesan and/or Romano Cheese. Bake at 350° for about 30 minutes. Serve over rice.
Note: Instead of serving this over rice, you can add cooked macaroni to this dish, making it a variation on the classic macaroni & cheese.
