    CORNISH GAME HENS L'ORANGE

    4 Cornish game hens
    ½ cup butter
    1 (6 oz) can frozen orange juice (do not dilute!)
    3/4 cups water
    2 Tablespoons Orange Marmalade
    2 Tablespoons soy sauce
    1 teaspoon rosemary, crushed

    Recipe



    Make a marinade out of the orange juice concentrate, water, marmalade, soy sauce and rosemary. Cut hens in half, and marinate for at least 3 hours, up to overnight.

    Remove hens from marinade, reserving the marinade. Sprinkle a little bit of flour on the hens, and brown them in the butter. Remove from skillet to a 9x13 baking dish.

    Pour marinade in skillet, and stir to loosen what crumbs may have been left behind, browning the hens. Pour the sauce over the hens in the baking dish.

    Cover and cook for 70 minutes (1 hour 10 minutes) at 350°
