    2 whole chicken breasts, skinned & boned
    ½ cup dry breadcrumbs
    1/3 cup parmesan cheese
    2 Tablespoons parsley, minced
    1 teaspoon salt
    Dash pepper
    1 clove garlic, minced
    1 lemon
    dash paprika
    ½ cup butter or margarine

    Recipe



    Blend crumbs, cheese, parsley, salt & pepper. Melt butter and add garlic. Pound chicken to flatten out a little. (You want the chicken to be a uniform thickness). Dip chicken into garlic butter, then crumbs. Coat thoroughly. Roll chicken in a light roll, and secure with a toothpick. Place chicken rolls in baking dish, squeeze the juice of the lemon, all over. Drizzle any remaining butter mixture, on top of that. Bake at 350° for 1 hour.

    Note: In any recipe that uses fresh lemon juice, I always juice the lemon FIRST into a small bowl or cup, and strain it, to remove the seeds. In addition to not having to pick the seeds out of your recipe, it is easier to control where the lemon juice goes, by drizzling it out of a bowl, than just squeezing it directly over your recipe.
