½ lb ground beef
½ lb ground pork
1 cup chopped onion
½ cup chopped celery
½ cup chopped parsley
4 cups beef stock
1 Tablespoon minced garlic
8 cups cooked white rice
1 cup dry white wine
1 teaspoon crushed dried mint
2 Tablespoon Worcestershire sauce
Hot pepper sauce to taste
Recipe
In a large saucepan over medium heat, sauté the ground beef and pork. Break up to make crumbly. Add onions, celery, parsley and green onions and cook until onions are clear. Transfer to large crock pot. Stir in the stock, garlic, rice, wine, mint and Worcestershire sauce. Add the hot sauce to desired temperature. Cover and let cook on low for 4 hours.
Notes: Dirty Rice can be eaten as a side or a main course. It can be used to stuff peppers or chicken. Some people even like to eat left-over dirty rice with eggs, for breakfast.
