    ROSEMARY RICE SALAD

    List of Ingredients




    3 cups cooked brown rice
    1 cup finely chopped fresh broccoli stems
    1/2 cup grated carrots
    1/3 cup finely chopped celery
    1/4 cup dark or golden raisins

    Dressing

    1/4 cup orange juice
    2 Tablespoons white wine vinegar
    1 Tablespoon olive oil (optional)
    1 teaspoon crushed fresh garlic
    1 Tablespoon chopped fresh rosemary, or 1 teaspoon dried
    1/2 teaspoon ground ginger
    1/4 teaspoon salt

    Recipe



    Place the rice, broccoli, carrots, celery, and raisins in a large bowl, and toss to mix well.

    Combine the dressing ingredients in a small bowl, and stir to mix. Pour the dressing over the rice mixture, and toss to mix well.

    Cover the salad and chill for at least 2 hours or overnight before serving.
