3 eggs
2 egg yolks
1 cup sugar
zest of 2 lemons
juice of 2 lemons, strained
½ cup butter
Recipe
Combine all ingredients in the top of a double boiler. Cook over hot water, stirring until mixture is about as thick as mayonnaise (this will take about 30 minutes or so). Chill. Makes about 2½ cups of Lemon Curd.
