Recipe Introduction
A dessert pesto, that can be added to brownies before baking, used as an ice cream topping, or as a topping for fresh fruit.
List of Ingredients
1/2 cup sugar
1/2 cup water
2 cups packed mint leaves
1/2 cup slivered almonds
2 Tbsp. honey
1/4 tsp. saltRecipe
In a small saucepan, combine sugar and water and bring to a boil. Boil until sugar dissolves, stirring constantly. Set aside to cool for 30 minutes.
In food processor, combine mint with almonds; process until finely chopped. With the motor running, add the cooled sugar syrup and the honey; blend until a paste forms. You may need to add more water to reach desired consistency.
Store in the refrigerator up to 3 days, or freeze up to 3 months.
