BROCCOLI CHEESE SOUP

2 Tablespoons butter
1 onion finely chopped
3-4 cloves garlic, minced
3 cups chicken or vegetable stock
2 cups potatoes, cut into small cubes
4 cups broccoli, peeled and chopped into bitesize pieces
1½ cups milk
1 cup grated cheddar cheese
salt and pepper to taste Recipe
Melt the butter in a large pot over medium heat. Add the onions and garlic and cook, stirring, for about 2 minutes, until the onion is soft. Pour in the stock, add potatoes and bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes. Add the broccoli, return to a boil, then reduce heat, cover, and simmer another 10 minutes or until the vegetables are tender.
Puree about half the solids with the liquid in a blender. (or you can puree the whole thing, some like the color and texture of some potato and broccoli chunks, it's a personal choice!). Return to the pot, stir in the milk, and heat over medium heat, stirring, until it's just barely bubbling.
Garnish with additional grated cheese and/or croutons
