1/2 CUP FINELY CHOPPED GARLIC
1-2 CHICKEN CUTLETS, DICED
6 CUPS CHICKEN STOCK
2 CUPS CANNED OR FRESH TOMATOES, CHOPPED
1/4 CUP LIME JUICE
SALT AND FRESHLY GROUND PEPPER TO TASTE
CAYENNE (OPTIONAL)

HEAT THE OLIVE OIL IN A LARGE SAUCEPAN OVER MODERATE HEAT AND SAUTÉ THE GARLIC ABOUT 5 MINUTES, UNTIL LIGHT GOLDEN BROWN.
ADD THE CHICKEN AND SAUTÉ AN ADDITIONAL 2 MINUTES, STIRRING FREQUENTLY.
ADD THE REMAINING INGREDIENTS AND BRING TO A BOIL. REDUCE THE HEAT AND SIMMER, COVERED, FOR 5 MINUTES.
