2 CUPS CHOPPED ONION
3 TABLESPOONS ALL-PURPOSE FLOUR
2 (14¾ OZ) CANS CHICKEN BROTH
2 CUPS WHIPPING CREAM
1/4 TEASPOON PEPPER
1/4 TEASPOON GROUND NUTMEG

DISCARD STEMS FROM MUSHROOMS. FINELY CHOP.
MELT BUTTER IN A SAUCEPAN OVER MEDIUM-HIGH HEAT. ADD MUSHROOMS AND ONIONS AND COOK, STIRRING CONSTANTLY, UNTIL TENDER.
ADD FLOUR. COOK 1 MINUTE, STIRRING CONSTANTLY. GRADUALLY ADD BROTH. COOK, STIRRING CONSTANTLY UNTIL THICKENED. REMOVE FROM HEAT.
STIR IN CREAM, PEPPER AND NUTMEG.
